Mahon Gin
Who - By the 1900s, few distilleries were left, with the main one burning down shortly later.A surviving employee, Miguel Pons Justo, rescued the business and original gin recipe. They are one of only two geographically designated gins in the world, known as i.g.t. Mahón-Menorca. As Menorca’s only remaining gin distillery, this makes this bottle a proud keeper of the tradition.
Where - Menorca, Spain
What - Mahón gin is made following the one-shot method, with local firewood used for fuel. The alcohol and water, juniper berries and other ingredients are placed in the copper alembic, and then heated. The vapor turns into a spirit of about 50% abv, extracting their essential oils and aromas. Distillation lasts around 9 hours, and only the heart is kept. The spirit is finally diluted down, and filtered of impurities. No extra flavorings or essences are added.
Why - The liquid will be clear with a platinum cast in your glass. Deeply aromatic, evoking lemongrass and cedar, with freshly cut flowers, all along with subtle juniper berries lurking beneath. There's a long lingering and appealing freshness that keeps you returning for sip after sip. Followed with rich undertones of spice, black pepper and citrus zest and finishing off roundly with a subtle saline touch.
When - While setting sail to a secluded island in search of the perfect cove to skinny dip and sip.
