Fidencio Clásico Mezcal is a traditional mezcal produced in the renowned mezcal-producing region of Santiago Matatlán in Oaxaca, Mexico. Made from 100% espadín agave, this mezcal is celebrated for its artisanal production methods and distinctive flavor profile.
Fidencio Clásico is crafted using a classic approach: the agave hearts (piñas) are roasted in a stone-lined earthen pit, which imparts a rich, smoky character to the mezcal. The roasted agave is then crushed using a traditional tahona (stone wheel) and fermented naturally with wild yeast before being distilled twice in a copper pot still.
On the nose, Fidencio Clásico Mezcal offers a captivating blend of smoky aromas, complemented by notes of citrus, green apple, and a hint of earthy minerality. The palate is well-balanced and complex, with a robust smokiness that is harmonized by flavors of roasted agave, green herbs, and a subtle sweetness. The finish is long and smooth, with lingering smoky and herbal notes that invite another sip.
